Asparagus
with Orange Glaze - Chef Eileen Quinn, Owner,
Dinner at Eight Catering Service
Chef Quinn is an expert
at light and healthy cooking and has been doing tasty dishes in
this style for years. This tasty side dish has only 40 calories
and 1/5 gram of fat per serving.
Ingredients:
1/2 cup fresh orange juice
1 tbsp sugar
1 tsp fresh minced ginger
1 tbsp soy sauce
2 tbsp water
zest of 1/2 orange
2 lb. fresh asparagus trimmed
Mix all ingredients
except for the asparagus in a mixing bowl as a marinade. Snap
off asparagus bottoms and peel stalks if necessary. Place
marinade in a large zip locked plastic bag and add asparagus.
Microwave on high for 1 1/2 minutes. Refrigerate for 2 hours
turning occasionally.
Preheat broiler.
Drain asparagus reserving the marinade. Place asparagus on
baking sheet and broil for 5 minutes or until tender. Place
marinade in a saucepan and reduce by half over high heat.
Place asparagus on a serving dish and pour glaze over it. Serves
4.
