Pesto - Chef Kip Peters, Executive Chef, South Bend

Here's Chef Peters'
version of the basic Italian pesto. Chef Peters adds parsley
to the traditional pesto to improve color and add an extra dimension
to the taste. Use it as a pasta sauce or as a condiment to
season fish or meats.
Ingredients:
1/4 cup toasted pine nuts (toast them for 5 minutes in a 350 degree oven)
1 tbsp. chopped garlic
1 cup fresh basil
1/2 cup fresh parsley
1/2 cup extra virgin olive oil
Salt and Pepper
Process first 4 ingredients
in a food processor until smooth. Add olive oil and process
again. Salt and pepper to taste. Yields 2 cups.
