Mushroom Soup - Chef Kip Peters, Executive Chef,
South Bend Country Club
Here's another hearty
and tasty soup from Chef Peters that's easy to make and can be a
meal in itself.
Ingredients:
2 lb. lean sirloin steak, diced
1 large onion, chopped
1 lb. fresh mushrooms, sliced
3 cloves garlic, chopped
1/4 cup of olive oil
1/2 cup flour
1 qt. beef broth
3 whole bay leaves
salt and pepper to taste
In a large soup pot
saute beef, onions, mushrooms and garlic in olive oil. Add
flour and stir to form a roux. Add beef broth and bay leaves.
Bring to a boil and simmer for about 30 minutes. Taste and
adjust seasonings. Makes 8 servings.
