Broccoli Sesame Salad - Chef Olan Cox, Executive Chef, O'Brien's and Whittaker Woods Golf Community.

Chef Cox enjoys cooking healthy, light and vegetarian dishes and he has created some very tasty recipes in this genre.  This salad is one of those.  Very light and low in calories but wonderfully delectable and good companion dish to nearly any entree.

Ingredients:

2 heads broccoli
1 lb carrots, peeled and julienned 
1/3 cup sesame seeds, lightly toasted
1/3 cup canola oil
1/3 cup rice vinegar
2 tbsp toasted sesame oil (dark)
Salt and pepper to taste. 

Rinse broccoli and cut off florettes for the salad.  Discard stems or save for another use.  Peel carrots and julienne.  Lightly toast sesame seeds in a dry fry pan.  Toss in a large bowl.  Mix dressing ingredients separately and toss into salad.  Serves 4.
