Cajun
Seafood Pasta - Chef Philip

Chef Abbott puts together
another great entree with one of our special spice blends.
Ingredients:
3/4 lb. pasta cooked al dente
1 lb. shrimp, peeled and deveined
2 tbsp The Good Gourmet Cajun Seafood Seasoning
1 tbsp olive oil
1 small red onion, julienned
1 red bell pepper, julienned
1 cup sliced mushrooms
2 cloves garlic, chopped
1 tomato seeded and chopped
1 tbsp canola oil
1/2 cup white wine
1 cup heavy cream
1/4 cup freshly grated parmesan cheese
1/2 tsp fresh lemon juice
Boil pasta until it
is al dente, drain and add a little olive oil to keep it from sticking
and reserve.
Heat a large saute
pan over medium high heat. Add 1 tbsp canola lil to heated
pan followed by shrimp and the Cajun Seafood seasoning. Saute
shrimp until just pink. Remove from pan. Add another
tbsp canola oil to the pan along with the vegetables and another
tbsp of Cajun Seafood Seasoning. Saute until tender.
Add white wine to deglaze pan and reduce liquid by half.
Add heavy cream and
reduce again. Add the reserved pasta and shrimp and heat through.
Serve with lemon juice and grated parmesan cheese. Serves
