Crunchy Chicken - Chef Kip Peters, Executive Chef,

Cheez-It crackers and
canned soup in a gourmet dish? You bet and it's very tasty
dish and easy to make. Perfect for the gourmet cook in a hurry.
Here's how Chef Peters does it.
Ingredients:
6 6oz. boneless, skinless chicken breasts
8 oz. Cheez-It crackers, crushed
6 oz. margarine
1 tbsp. poppy seeds
1 can cream of chicken soup
8 oz. sour cream
Precook chicken breasts
by boiling, pan searing or grilling. Place cooked breasts
in a baking pan sprayed with cooking spray.
Preheat oven to 350
degrees.
Mix soup and sour cream
together, cover chicken breasts with the mixture. Mix crackers,
margarine and poppy seeds together and sprinkle on the chicken.
Bake for about 20 minutes.
Serves 6.
