Crab Stuffed Phyllo Cups - Chef George Albiez, Instructor, Culinary Arts, Ivy Tech State College

If you haven't made use of the frozen phyllo cups available at most supermarkets, here's a super appetizer to get you started.  It is creamy and flavorful and will liven up any party.

Ingredients:

2 packages frozen phyllo cups (usually 15 cups per package)
1/2 Lb. crab meat
1 cucumber, quartered and seeded, finely diced
1/4 cup mayonnaise
1/4 cup Dijon mustard
1/4 cup sour cream
1 tsp fresh lemon juice
2 tbsp chopped fress dill
Salt and white pepper.

Refrigerate phyllo cups until ready to use.  In a bowl combine mayonnaise, Dijon mustard and sour cream.  Season to taste with lemon juice, dill, salt and white pepper.  Fold in crab and refrigerate 1/2 hour.

Mix crab thoroughly and fill phyllo cups.  Garnish with a small sprig of dill.  Makes 30 appetizers.
