Fennel
and Orange Salad - Chef

The combination of
orange and fennel flavors works very well in this salad. The
fennel tends to lose its licorice-like taste and provides a tasty
texture to the dish.
Ingredients:
2 fennel bulbs, shaved
2 oranges peeled
3 tbsp extra virgin olive oil
2 tbsp honey
salt and pepper to taste
Shave the fennel with
a mandoline so that it looks like slaw. Peel the oranges and
cut out the sections. Squeeze the leftover pulp to remove
the juice and discard pulp. Combine ingredients in a bowl,
toss and serve. Serves 8.
