Roast
Pork Loin - Judy

Pork and garlic come
together deliciously in this relatively simple recipe. Be
sure to give the meat time to marinate properly for best results.
Ingredients:
3 lbs. pork loin roast, membrane removed
3 tbs. extra virgin olive oil
6 tbsp. garlic, minced
6 tbsp. chopped fresh rosemary leaves
Marinate pork overnight
in the other ingredients. The next day, preheat oven to 375
degrees. Roast pork uncovered on a rack for 1 hour and 15
minutes or until a meat thermometer registers 135 degrees (for medium
rare) or 140 degrees (for medium). Allow meat to rest for
10 minutes before slicing.
