Sage Thyme Pesto - Chef Kip Peters, Executive Chef, South Bend Country Club

Here's an herbal pesto from Chef Peters.  Chef Peters replaces the traditional pine nuts with bread crumbs and uses sage and thyme instead of basil.  The result is an excellent accompaniment for a variety of meats and pastas.

Ingredients:

1/2 cup Italian bread crumbs
1 tbsp. chopped garlic
1 cup fresh sage
1/2 cup chopped fresh parsley
1/4 cup extra virgin olive oil
Salt and pepper

Process first 4 ingredients in a food processor until smooth.  Add olive oil and process again.  Salt and pepper to taste.  Yields 2 cups.
