Caribbean Marinated Shrimp with Radiccio - Chef George Albiez, Instructor, Culinary Arts, Ivy Tech State College

Go beyond the typical supermarket cooked shrimp with dipping sauce.  These wonderful marinated shrimp appetizers will take you to the next level, a level certain to please your guests.

Ingredients:

1/4 cup dark sesame oil
1/4 cup honey
2 1/2 tbsp freshly squeezed lime juice
1/2 tsp. minced ginger
1/2 tsp minced garlic
1/2 jalapeno pepper minced
16 medium (16/20) shrimp, peeled, deveined
1 large head radiccio, leaves separated.

Make a marinade from the first six ingredients, add shrimp and let stand for 1 hour or more.

Saute shrimp with half the marinade in a large saute pan over high heat stirring frequently for 2-3 minutes until shrimp are opaque.

Add remaining marinade and saute radiccio leaves until wilted (1 or 2 minutes.)

Arrange radiccio on plates, top with 2 or 4 shrimp and serve.  Serves 4 or 8.
