Marinated Shrimp with Radiccio - Chef George Albiez,

Go beyond the typical
supermarket cooked shrimp with dipping sauce. These wonderful
marinated shrimp appetizers will take you to the next level, a level
certain to please your guests.
Ingredients:
1/4 cup dark sesame oil
1/4 cup honey
2 1/2 tbsp freshly squeezed lime juice
1/2 tsp. minced ginger
1/2 tsp minced garlic
1/2 jalapeno pepper minced
16 medium (16/20) shrimp, peeled, deveined
1 large head radiccio, leaves separated.
Make a marinade from
the first six ingredients, add shrimp and let stand for 1 hour or
more.
Saute shrimp with half
the marinade in a large saute pan over high heat stirring frequently
for 2-3 minutes until shrimp are opaque.
Add remaining marinade
and saute radiccio leaves until wilted (1 or 2 minutes.)
Arrange radiccio on
plates, top with 2 or 4 shrimp and serve. Serves 4 or 8.
