At 5:21 there's a fantastic braised pork shoulder. Does anyone have the recipe?
Last meal I did called for brown stock (http://www.youtube.com/watch?v=GrSpTrodD-w) that took me (in a home cook environment) about 8 hours so I don't matter the complexity or the time.
