Hi guys, I would like to share a few of the knives I have been putting together. Any and all comments are welcomed! Thanks for poppin' in!
Pierre (aka Bear)
This is a new piece, made from S35VN, hand rubbed finish, at HRC61.
3/32" thick above the heel, a different grinding meathod gives this a nice convex, and great food release.
Full distal taper, I dont have a scale, but ballance point is 40 mm ahead of the heel. Also there is a mosaic pin in the handle butt.

Mirrored stainless bolsters
Stabilized dyed spalted maple burl
Mosaic pins.
Spine and choil are rounded, edges broken and rounded on bolsters, and the spine in the handle is mirror finished, 'cause i'm a sucker for punishment... :cool:

So I have a 240 mm western chef, CPM 154 blade @HRC 62, stainless bolsters, vulcanized fiber spacers, G10 scales, 2 stainless pins, and one mosaic.

Excellent Work there Buddy!
Love that Buckeye and Amboyna with the sapwood too.
Isn't that CPM-S35VN a bear to finish? Pun intended;).
Great work on the Ferrules too!

Ok, this one is 2 of 4. It goes along with the G10 handled chefs knife above.
CPM 154 blade at HRC61 Stainless bolsters and pins, mosaic center pin
G10 scales with a white fiber liner.

I've been reluctant to say much. It is absolutely the most gorgeous piece of kitchen cutlery I have ever seen. The blade height, 45mm, and the length, 250mm, give it an almost suji appearance, but with plenty of knuckle clearance. All I can say is, "Pierre's the man!"

This is a new steel I am trying, it is a high carbon steel, at HRC 64.5, Transitional grind. Convex lower, and slight hollow upper blade.
It has a G10 ferrule, stainless and mammoth tooth spacer
African black wood handle, wood from Mark at Burl Source. This stuff polishes up like glass!
Keep in mind, this is pre sharpening and pre glue up.

How did you grind your hollow before Convexing? A large diameter wheel?
