Adding to what has already been said...
I purchased blindly the Tojiro Santuko for my brothers birthday gift.
[the usual kudos to Koki for prompt service and the gift wrapping...and for getting anything from Japan to Wash. DC in 3 days - Purchased Tues. delivered Friday

BUT - the knife! My bro reports it to be incredible, an instantenous favorite, and sharp as a dickens. He fell off his ass when I reported that these do not arrive fully sharpened. Now my bro is the cook in the house and at least has a clue, so for those of us a bit more 'discerning' /ubbthreads/images/graemlins/wink.gif The Tojiro 'value' line may be "lacking" compared to our Susin, Watanabe, or Carter, but for the rest of our familiy, it would be far superior in so many ways to the normal household blades, and we'll have something to use when we visit... /ubbthreads/images/graemlins/smile.gif

Thanks for sharing your tale... I've had a similar reaction from friends and family members when I made the Tojiro DP a gift. That series truly is perhaps the best bargain in existence in kitchen knives.

I'll "third" that sentiment. I'm thinking of getting a couple for my mother... now that I have experimented on my mother-in-law. /ubbthreads/images/graemlins/laugh.gif
