I've got a Global g-16 and a Spyderco Sharpmaker. I'm in cooking school, so I use the knife more than the average home cook, but less than the average professional cook. Would it be a wise idea to use the Sharpmaker for weekly tune-ups? Would this prolong the necessary time between full on sharpenings? If the weekly tune ups are a good idea, would I still use the course til I get a burr, then use the fine or would I be able to get away with using just the fine?

Sure I think the Sharpmaker will work very well for maintenance. Use the more acute of the two angles. How much work it needs with which grit is always a function of the condition of the edge. Learn to feel the burr with your thumbnail. It will tell you what it needs.
See how easily you can turn the burr with a light swipe of the finer grit. If it doesn't turn readily, then go to the coarser grit and grind away until it does. Good cooking.
I never considered the Sharpmaker as a tool designed to grind bevels but it is excellent for the period of time between grindings.
