Any Japanese favorites for turning artichokes? (size, shape, mfg., steel?) This work tends to dull blades rather quickly.

in general a sharp paring size knife should work fine it always has for me. I prepped maybe 50 artichokes yesterday with a 210 gyuto and had no problems at all, for how i was prepping them i used my hands a lot but in most cases any knife should be fine just whatever you are comfortable with
