I do not seem to have much time for posting but have followed this and the other forum for a few years now(some of you will know me),any way here are a few of my knives i have managed to take pics of

Sorry i forgot to say what they are,
Shigefusa 210 gyuto.
Shigefusa 165 nakiri.
Mizuno 240 gyuto in blue 2 steel with Red Mahogany stained handle.
Mizuno 210 Mioroshi deba in blue 1 steel with Red Mahogany stained handle.
KD 180 Santoku with Desert Ironwood handle by Daniel at E.E.
Gude 7431/32 Bread knife with Olive Wood handle.
Red Arca 195 gyuto in White Steel forged by Yoshihiko Akitmo,ground and polished by Kiku Matsuda and handle by Kuwata.

Very cool knives. I like wa-gyutos myself a lot.
How do you like the Shigefusa gyuto? Is it particularly thin?

I'd love to see some more pictures of this one. Do you use it much? How is it's geometry? That knife has got such an interesting story with it.

Shigefusa knives are fantastic tools with the best fit and finish of any traditional knives i have ever had. The spine is quite thick but very well rounded and then tapers down to a very thin edge.
It is hard to explain but when you pick one up you know straight away that you are going to want to cut something with it and that it just feels right.
The Mizuno knives are almost the same,the fit and finish is not quite as good but that is easy to fix. The steel is just as good and cutting abilty is on a par with the Shigefusa.
The handle on the Mizuno is smaller which suits my small hand and you get to choose the horn colour when you order from JCK.
The main difference is the hight from spine to heel,the Shig is 53mm and the Mizuno is 46mm and remember the Shig is a 210 and the Mizuno is a 240 so the cutting action is not the same.

Hello watercrawl,you can see some better pics of it on the other forum,but to answer your question no i do not use it a lot.
It is 4mm thick at the spine and only 40mm from spine to heel with the first 18mm not tapering so the taper is quite thick down to the edge.Having said that it still cuts very well without without the super thin edge of a gyuto and is very easy to get a razer edge on.
The fit and finish is second to non with a mirror finish but it is very reactive
due to the white steel and i have had no chipping problems, it seems to be a very tough blade.
Koki at JCK said it was forged like a Samurai sword and not to worry about using it for any task in the kitchen apart from chopping bones, it is ment to be multi functional.
I am sure if you only wanted to use one knife that it would do the job but it is not as good as a dedicated knife for a given task,but it is a fantastic example of a hand made traditional knife made by three of the best in Japan.

really? it's not... blade heavy and out of balance like other wagyutos? is it... nicely balanced like... a global? :p

The balance is very good at 1.5" in front of the handle compared to the Mizuno at 2.25 due to the thicker blade,but having said that i love the handling on both of them.
