Some of you may have noticed (or not) that I deleted my original Show and Tell thread about 6 months ago. Since I took pictures of every knife that has graced my kitchen I thought it would be fun to start a new thread showing pics of all the various stuff I've had over the years rather than the usual this-is-what-I-have type of thread. Since all my pictures are on my home computer I'll have to start posting them tonight or tomorrow. Hope people find this somewhat interesting to look at.

I left my Tosagata knife outside after using it to break down boxes and it rained. Rusted, I decided to use it to work on sharpening skills since I was pretty new to doing it at the time. Made some modifications. Way too much work went into it but I learned a lot from the experience.

Hiro Itou petty with Abalone handle. Sold it off only to come to the conclusion that I would later prefer a stiff petty. This would've been it.

Hiromoto AS gyuto 240mm. JCK used to have a give-away each month based on customer knife sales. Anyone who made a purchase got their name put into a hat and my name was drawn the first month of this promo. This knife was the prize...June 2005.

I've got it now (from Joe). It's down to about 310 mm :) Nice knife. Don't think it will be getting sold anytime soon.

He probably uses the one he made with Mr. Carter's help the most. If any knife has soul, the one you've brought into creation with your own two mitts would be that one.

Brandon, you may be right on that. It has been a very fun ride.
Vho, out of the pictures above I actually have I only have the Tosagata, CCK and the Korin deba. Everything else was sold to buy more knives.
Thom, you are correct, sir. I find myself using that knife more than any other.

Bob this is neat, are you taking the photos with your Canon G9? I especially like the series of photos of the Tosagata and I really like that knife, where can I find one? Is it thick or thin, looks thick because of the single bevel.

Thanks Jannie. Actually the majority of the pics were taken with my old Canon A80 when the knife was purchased. I didn't get the G9 until last year. These knives are ones I've had over the years but don't have them anymore...well, a siginificant portion I no longer have.
The Tosagata is a fairly thick knife but it was originally a double bevel that I played around with and made it single beveled on the one side. It's not a true single beveled knife. You can buy them at JWW. Pretty decent, made with white steel and they're suprisingly hard and super cheap.

Okay I found some over at JWW but none of them had the flat cutting edge, did you do that and I also can't tell if yours is a Deba or thinner. I'm fascinated by this knife of yours partially because of the fun I'm having with my new petit santoku and it's opened me up to trying different knives than what I've used before.
I'm also interested because it might be fun to have a knife I could just work on without worrying about it, I'll find the link to the Deba JWW has and tell me if it looks like the one you got in it's original condition. I'd probably try to put the single bevel on it and make the blade flat like yours.

When I bought this knife the edges were more flat even in the picture that JWW had on their website. The one's they show now are more curved so it's my guess the profile has changed a bit over time. It's quite possible I made it more flat than when I bought it too but it definitely didn't have the curve shown on their website now. this is fairly light-weight...think Ajikiri.

I think this knife ought to go in the Knife Hall of Fame. Its almost like the Maltese Falcon of knives. I know I am still kicking myself when I had a chance to get it, and Ken beat me to it by about 30 seconds.

Do you still have the Watanabe dragon with the custom handle? I have to say, I'm not really into a lot of custom handles that stray too far from the traditional western or wa handle look, but that one is absolutely stunning. Who did it for you?

Yes, Gabriel, the Watanabe is still in my posession and will always be in my possession even if I end up homeless living out of a furniture box downtown somewhere. I'm very much like you in the respect that I like to keep things as the maker intended and his basic Ho handle is quite nice. But I saw a new crop of handles become available for sale and at first I didn't notice it. But then it's maker posted more shots of it that really brought out it's qualities. It was then I decided I had to have it. I bought it because it looked like it was made for the dragon blade and this blade only. I had to have it. It is truelly a sight to behold in person. Absolutely beautiful and has a wonderful "feel" to it when using it too. It's maker is Stefan aka Apicius9 the guy who posted right above you. Below is his website.

I laugh every time people get all excited because the brown truck pulled up delivering their knives. Not that it still isn't exciting because I know what it's like every single knife I get in the mail. But how would you like to get this delivered to your doorstep in one box? Ha, no way. Actually, the knives were distributed around to the people directly involved with the project for evaluation who in turn did their own assessment of performance and sharpening.

Oh, forgot to mention that I was initially hoping for a darker colored handle than what was put on the knife I made. I really had no complaints though just a personal preference. But low and behold this same handle has turned into a very dark and rich looking brown that has turned out to be exactly the color I was hoping for. The color of the wood changed through use and it never occured to me that this would happen. I should post a picture of the way it looks now to show comparison. I vaguely remember people wanting to see the patina on the dragon blade so I'll take some current shots of that too.

Bob, is your Watanabe dragon his standard geometry or special order? What is the finish on it? I'm probably going to order one of his gyutos soon.

I believe it's his standard geometry. I didn't ask for anything special other than the engraving. The finish is what to be expected from his Master Grade line of professional knives. Impeccably finished and beautiful.

Forgot to post pics of the new petty. Carter SFGZ-RH "funayuki" 5 sun (150mm) purchased from Arizona Custom Knives. I was looking for a stiff petty and this one fits the bill very nicely. Could have a lower profile to be ideal for me but it's no biggie the way it is.

LOL, thanks mad_dog. Surprisingly enough I haven't bought a knife since I got the Carter petty. Came close to getting a Tadatsuna 210mm petty but used the money to buy a camera instead. I've been thinking of posting some current pics of the Watanabe since there was considerable debate regarding what to do with it. Also thinking about posting a pic of the handle of the knife I made at Carter's shop. The color is way different now. Some day I'll get around to it.

Fun to see all these knives again, Bob. Somewhat ho-hum I guess, compared to all the other beautiful stuff you've owned, but I love that set of Masahiro Steak knives. Cursory search on the net turned up nothing. Do you remember where you got them or know if they are still available somewhere?

Hey John, they are the Masahiro MVB series. I got them from JCK a long time ago but they don't carry them from what I can see. They can probably get them though if you ask. As far as I can tell, Knife Merchant is the only place that has them available.

Nope, each. Yeah, not cheap but for as long as they'll last and get used it's worth it. They were around $85 at the time IIRC so not as hard on the wallet as these days. I looked all over for big steakhouse kind of knives but was finding nothing other than serrated garbage. THESE though are awesome as steak knives. Heavy, thick, sharp, great profile, lookers.

Bob, did it ever occur to you that you, apparently, were taking pictures of your knives, long before most of us ever heard Fred's Cutlery, and thought Japanese knives were all cheap ass Western copies available at any Walmart....and never even THOUGHT of taking a picture of a damn kitchen knife???? <g>

Heh...well you're probably right, but...really...How many folks were into quality Japanese knives 7 years ago? I think I was looking at Watanabe on line and as a result discovered Fred's...maybe 3 1/2 years ago...completely clueless newbie. So, maybe I was the only one who didn't know diddly squat. <g> I bet you take lotsa pics of your other obsessions as well. ;-)
