Hi There,
I have recently purchased from Murray Carter a knife (High Grade Series, Nakiri-bocho) and his sharpening DVD. I am enjoying both.....
You can purchase his shaprening DVD, "Advanced Knife Sharpening Techniques", directly from him for $30 plus $10 shipping, for a total of $40 US. Mail your check to him, the address is:
Murray Carter
2506 Toyo Oka, Ueki
Kamoto, Kumamoto
Japan 861-0163
I have learned a lot from his sharpening video, it is very informative and helpful, and well worth the money.
I also have "The Chef's Edge" video from Korin Japanese Trading Corp., and the "Chisel Sharpening" video from Shapton. I have learned something different from each of of them, and I am now honing my free-hand water stone skills!!. I hope this info helps...CYA

I like the part in the video where he sharpens a knife using only a cement block and a piece of cardboard, just to show that sharpening is all about angles and technique.

Ratton,

Since you have all three, if you only had the money to buy one, which would it be?

Icevic,

A cement block and cardboard?!? Wow! That is a trip. /ubbthreads/images/graemlins/shocked.gif
