Hello peoples of Foodie Forums. This has thus far been a very interesting place. Thank you for all of the fresh ideas, insights, and assistance. I don't have too much detailed knowledge regrading knives, but I do have practical experience in professional kitchen environments and a good memory.
I like knives when they work well. I find that there are really many knives that are pretty good at what they do. I have my preferences, but I know a knife doesn't make a chef. There are many great chefs who use knives that knife guru's would laugh at.
I sharpen as taught by fellow chef's on waterstones. Not too many stones, just a Shapton ceramic 1500, 5000, 8000 grit progression. It works well enough for me.
Below I have included a list of knives I have owned and used in my past for anyone who may have question regarding any of these. Many I do not own any more. I kinda just like using them and moving on...
