Thanks for all the information here. The Usuba was an impulse buy as a result of the Japanese Kitchen Knives book, will need a few cases of Diakon relish to practice techniques I guess :). Once, I sharpen all, I am looking forward to start using the Gyuto and Honesuki, and retire my other knives.
