Amy, the Saturday mail/female carrier just called (gotta love living in the bushes!) to say that my little 120 petty is out and about and will I be home today to receive it?

first carbon (I guess it counts) and looking forward to seeing it and doing some stone work.

Snowed in (third weekend in a row) today, so between making doll bed and working on dishwasher, should have time to play. I just got this one to play with and it was really inexpensive, so I am not expecting too much..............

OK, Amy came through, knife delivered.
At first blush, it appears to be a mini-gyuto. F&F was pretty good, top of handle not quite flush with tang, but fair. Choil a bit rough. Bevel was at least 90/10. Not sharp.

Down to the basement and the stones. The first lick I hit with the 120 EP, I thought I had the stone in upside down and I was using the wrong side, as the stone felt like it was skating. This thing is HARD. Harder than anything I've ever seen. This is the first Japanese knife I’ve ever sharpened, so I was quite surprised. VG-10, 154CM ain’t got nothing on this. I have sharpened my Shun parer, but it is evidently nowhere near as hard, regardless of what they say. Making little progress by hand, I sauntered over to the Tormek, making quick work of a 50/50 at about 15°(probably a bit less, I got carried away in a couple of spots and got the bevel too long). Back to the EP, raising a burr with each successive stone, deburring at each stage with a piece of rock maple on the coarse stones, then some cork. Went through the stones, then a blank with 5µ film and stopped.

Holy sweet mother of all that's holy! If this is "standard" steel, I really won’t believe the good stuff. Absolutely nasty wicked sharp. Keeping fingers crossed for some decent edge retention.

I don’t know what the kanji or the box says, probably something like “You have been assimilated” That would be correct. My thanks to The Collective here, a great resource for sure.

Now to go chop on something or other……………..

Well, either I'm reading my dictionary wrong, or it says "this edge is poisoned," so I guess we'll all be lining up for your funeral soon.
