.............
Did you get a 50/50 symmetric or asymmetric bevel? Mine came 50/50.
Great. Congrats and luck...
Wow, you can get that knife in 390mm... (!!) Anyone have one?

my mom bought me a 240mm for xmas 2 years ago. It was my first carbon j-knife. What did they say in "Spinal Tap"? "It goes to 11" Thats this knife. Great workhorse for a pro kitchen. Great weight great steel good geometry. It just is better than most knives-they only go to ten...
igel Tufnel: The numbers all go to eleven. Look, right across the board, eleven, eleven, eleven and...
Marty DiBergi: Oh, I see. And most amps go up to ten?
Nigel Tufnel: Exactly.
Marty DiBergi: Does that mean it's louder? Is it any louder?
Nigel Tufnel: Well, it's one louder, isn't it? It's not ten. You see, most blokes, you know, will be playing at ten. You're on ten here, all the way up, all the way up, all the way up, you're on ten on your guitar. Where can you go from there? Where?
Marty DiBergi: I don't know.
Nigel Tufnel: Nowhere. Exactly. What we do is, if we need that extra push over the cliff, you know what we do?
Marty DiBergi: Put it up to eleven.
Nigel Tufnel: Eleven. Exactly. One louder.
Marty DiBergi: Why don't you just make ten louder and make ten be the top number and make that a little louder?
Nigel Tufnel: [pause] These go to eleven.

Update*
Really starting to appreciate this knife. It cuts effortlessly--
Oddly though, it has made me appreciate my 10" Nogent even more. When comparing the edges, they are about same thinness, but the Nogent has more of a distal taper, and is thicker at the base of the spine. The HC holds its edge longer--both get equally sharp.
The HC is one helluva knife. Again, I will write a more detailed review w/pictures in the future.

I should also thank BDL for answering all my questions, and pushing me in the right direction. Thanks buddy!
