Some of my stuff...yes, those are the infamous Chromas. Bought those before I new sights like this existed. Favorites are pre-war Sabatier Pros. Haven't used the Carbonext or the Hiro yet.

Used the 500 Beston and 1200 Bester for 1st waterstone sharpening session tonight. Used a knife I don't use very often as practice knife, (yeah, you guessed it, one of the Chromas). Going to wait to break out Chosera 5k untill I can get bevels more even.

I could really tell how my angle drifted in spots. Slight wear patttern in a couple of spots where bevel was slightly convexed. This is first asymetrical bevel and 1st waterstone usage.

Nice looking stuff how do you like those Chroma knives btw. A long time ago I was interested in them but that phase past. Still curious though eh

Probably would not recommend them. The handles are just awkward. They're actually more comfortable than they look, but if your a pro, I couldn't see using them all day long. If the "pearl" was not there and the bolster was a little more rounded I think it might work better, atleast for me.

Nice set up! I spent some time in France and fell in love with Sabs...wish I didn't because they are expensive, and I am too cheap to shell out the cash! The ones I had seen weren't nogents, though. Either way, the stuff looks great! Someone has a gyuto fetish! :)

Thanks Lefty, yeah I'm somewhat of a Francophile. Vacationed in Paris one year and have always wanted to go back. The food there really was amazing. Never got over it. Also love French made cookware, but thats another forum. Really am liking the gyutos, already planning on buying a Masamoto HC 240.
