Man, every year a month or two before Easter & Mother's Day I swear to myself that I'm gonna get out of this racket and get a grown up job...but it never seems to happen!Of course, once I get past E & MD it's smooth sailing til late fall, so there's that. Wound up working 11 am to 11 pm; my feet are sore but the whole day was OT, so I ain't complaining. It went pretty well, especially the brunch portion. We did NY strip steaks instead of prime which ended up working very well; we had about 25 at a time in the circulator set @ 130 F, just took them out and seared them on the broiler to whatever temp. The feedback was excellent with all the customers being really happy.
Of course, I'm sure that around March of next year I'll be saying it again...![]()
