    Default Chives

    Hi guys,
    my wife has started growing me a fine selection of herbs. I now have a large quantity of Chives, far to many for a few salads, (a patch about 2 feet across!) So does anybody have any other or interesting uses for them and/or can they be preserved apart from drying?

    I have had reasonable success as follows:

    they should be dry.
    chop to length - I usually go 1/4=3/8 inch
    spread on a sheet pan and pop uncovered into the freezer for 4-5 hrs.
    scrape up & bag them - quickly - for storage.

    quick is the operative word because the pan will immediately begin to collection condensation from the air and seems keeping them dry is key.

    If you have too many chives (is that possible?) then scallion pancakes might be something to try. They are really delicious. This website has decent instructions on how to make them.
