    Default Sakai White Steel WA Gyuto 240 Ultra Thin

    Saw this on E- Bay Blueway Japan.Anyone used this knife?At 209.99 it looks to me to be one of the thinnest 240's out there.

    240 Octagon Handle Wa-Gyuto

    1.6 at heel

    120gr.(4.2 0z)

    61-62 Hrc.

    Yeah I saw them too, he is also doing the same knife in blue2.

    Unclad blue 2? Tungsten-alloyed steels are very lovely. Moritaka's my current hookup for clad blue 2.

    I agree Tom I like blue & white carbons for diff. reasons though the Tungsten in blue gives edge retention advantage.

    I have this knife. Very nice fit and finish. Very good geometry - very akin to my Konosuke HD. Easy to sharpen and deburr. A little reactive, but I was throwing a lot of onion at it. All up my favourite knife. A laser in every sense.

    Thom they are with western handles or as Yanagiba. Perhaps an email would be in order if you want blue with Wa.

    Along with the yo handle, I see that the Sakai Takayuki is a gargantuan 2.2mm at the heel. And listed as Sakai Takayuki versus just "Sakai." As far as yo handles go, it looks excellent. Everything about it is stupendous, but I want more (and less ).

    Default Oh gross!

    With my trusty Cabela's calipers and an eyeball estimate of 25mm, I measured my custom blue 2 Moritaka, old style Kono HD, and quasi-refurbished Sakai Takayuki Grand Cheff wa-gyuto. All of them were close to 1.6mm measured 25mm above the edge near the heel (all three have a good distal taper, though) and the Kono HD was 2.2mm and the GC was 2.4mm wide at the spine above the heel.

    Will have to fix that...
