    I've just prepared the evening meal for us at home - yummm roasted garlic, baked spicy potatoes etc..

    Here's the scenario that came to me while I was slicing the veges: Imagine this:-

    All (yes ALL) of your prize Japanese kitchen knives have been lost/stolen/destroyed/gone for good. You have none left. All gone bro, your kitchen is naked !!

    The replacement fairy has said to you.. "You are only allowed to choose ONE knife to replace your lost army of knives."

    Which one would you choose, no excuses no exceptions, which ONE knife would you choose. ??? For yourself and spouse/family maybe?

    I have made my personal decision, and it surprised me.

    This, of course, is only a thought experiment, but what do you think???

    That's a easy one for me,
    My one and only would be/is My Rhino Chop Pattern. This covers all Vegetation, Stew meats, Fruit of every size and shape, Most fish. The Chop will also cover butchering to a large degree and a Spatula to my now naked kitchen.

    So tell us Doug? What's your decision? or do we have to guess what your choice is? lol

    I would take a 270 Ginsanko Kiritsuke. I can adjust what I cut or how I cut it but I don't want to be without this knife.
    Or if I decided I wanted more versatility I would commission a 280 Kiri-gyuto in a high-end stainless, it wouldn't be a laser but non-too thick either about like my Yoshihiro gyuto with nicer steel and that flatter profile.

    Just one for everyone? Maybe a Mundial 6" serrated utility. Just one for just me? A Tilman Leder custom gyuto/kamagata nakkiri hybrid in O7 that makes paper look fat.
