Went with the standard. I wanted the "new flatter profile," which I believe was the funayuki, but they were out of stock. Thought about the kiritsuki because I wanted the profile to be flatter, but having never handled one,knowing they were just slightly thicker than the standard, and not sure how they compared in length, I shyed away and went standard. Hopefully down the line I'll get the chance to try out a few of the other profiles.Originally Posted by thombrogan
Went with the Gesshin Uraku 195mm Deba from JKI. Looked like a great value and I really enjoy giving Jon as much money as possible to payback the huge amount of help he gives me with making decisions on knives, stones, etc. Best service I have found.
