maybe it's cause i sharpen bones, beef jerky, and flesh for a living, i don't really enjoy sharpening. can't wait for it to be over. haven't figured out the touch up, maintenance thing yet. use knives one to another till all dull and a handful of knives to sharpen. but oh how i love the results! a sharp knife! what a joy! most of my life, i didn't know what that was! cooking is soo much more fun! i owe youz guys so much! tytytytyty!
