Isn't the Dexter american made? I have the one on the right. It was a $10 ebay deal. Not a bad knife. I would put it on a quality par with the Dexter. It is classified as a "chinese slicer" so it is lighter and thinner. It gets the job done. Out of the box it was about as sharp as a typical german knife. I haven't used it a ton so I cannot comment on the edge retention or sharpening ability. Come to think of it with my newfound sharpening abilities I will touch up the edge tonight and see how turns out.
The one on the left seems identical to the Dexter which is more of a chopper with a thicker blade. I'd be interested to see if it performs as well or better. Hmmm.
I'll also point out that many people have said that most chinese restaurants (and mexican for that matter) use the Dexter cleaver. The lady at the asian market where I get my Chan Chi Kee cleavers says that all the young chinese cooks are going for the Dexter and all the old wise cooks use the Chan Chi Kee cleavers.(I added the wise part mostly due to personal opinion [img]/ubbthreads/images/graemlins/grin.gif[/img])
I have a dexter. I can't remember where or how I got it, or even how much I paid for it. It has served me well. It takes a beating.
Yes, Dexter is made in the USA. In fact, Dexter (Russell-Carrington) is made in Eastern Mass while Lamsonsharp is made in Western Mass. They both make knives in the RC52-55 range. I've held each of them but never used either cleaver.
