    Hey Thom,

    Got a question... Where'd you get the Spyderco KX06SE bread knife?

    Your collection looks great. I loved my Tojiro Nakikri before it was "stolen".

    How do you like the Shun Elite versus Tojiro Paring?

    hehe, i worked with a guy from like atlanta with one of those spyderco's. it's a serrated utility knife. it seemed to be a good tool to have cuz you never know when it might be useful.

    The KX06SE and the plain-edge version (which has olivewood scales) are now available at most Spyderco-carrying retailers. The new ones have VG-10 blade steel instead of MBS-26, though. Mine's a gift from my pal, Cliff.

    My Shun Elite Paring Knife has completely spoiled me so far as small knives go. Don't know if my Tojiro is a fluke, but its factory edge is thick as nails whereas I've resharpened the Shun Elite several times and it's still very thin (if you use a plate as a cutting board, you can resharpen lots of times, too!).

    Sorry to read your nakiri was "stolen." Sounds like you need to get a damascus one to replace it.

    It was my first high-quality kitchen knife and it's great at push-cutting as well as the slicing you'd expect from a serrated blade. Uncle Sal designed it and Masahiro made it - that's a winning combination in my book.

    Based on your comments, a Takeda will be heading towards my house (though I'm having buyer's remorse as I wait and keep thinking a 240mm Yoshikane or Ryusen Blazen should be on hand 'just in case.')

    i saw a new takeda about a week ago. the main difference i've noticed was the outer kurouchi cladding, and that was about it. my co-worker has a new takeda knife and it performs about the same, though i noticed that it's a tiny bit more flexible than mine.

    it'll be ok. just make sure to post a bunch of pictures.

    Now just wanting to bolster its presence with some more Takeda stuff and maybe some Carter stuff.

    Here are my modified 254mm Yo-Debas from Busse:



    The muddy brown one now has slightly more steel exposed. It's edge was a little too fine for cutting steel bedframes. Knew that was a problem with gyutos, but not modified yo-debas.
