Herb recipes needed!
I have a ton of greek oregano and some sicilian oregano and a ton of sage and also a bit rosemary and dill and it all needs to be used up. Any suggestions?

Hmmm, do you use an apple jelly base? What do you use it with?

take meyer lemons, quarter them. take all the seeds out. cook it in simple syrup until softened. puree the lemons with some simple syrup and oregno. the jam will thicken up when chilled. so keep it a bit looser than the consistancy you want. save left over syrup for ice tea
easy recipe.
ps. small pinch of salt for evrything, desserts too

Thanks, for the help. I am still looking for meyer lemons ( I might have to buy a tree!) but I tried the sage pesto last night-- I sauteed slices of chicken in light olive oil and added butter and chopped sage for the last minute. I took it out and covered with a sage pesto made with sage, parmesan, olive oil and salt and spritzed it with a tiny bit of vinagrette and it turned out great! Thanks.
Are there any other sage pesto recipes out there? Thanks for the carrot recipe, I'll have to try it. Today I made quiche with sage rosemary and chives w/ bacon and a bit of bree and it was quite good also. Keep them coming!

i like kmca's idea with jam. if you like lamb or you don't get a chance to use it that often, this sounds like a good combo...better than the traditional mint jelly. these are all prime mediterranean ingredients, including the lamb. try searing some lamb chops in brown sugar or honey to imbue it with an almost natural sweetness,or you could go the opposite direction and use some cayenne pepper or paprika...adding corriander, star anise, and maybe few bay leafs to the jam for its own hint of spice. if you get a chance to try it before i do let me know how it is...
