    Perhaps she should upgrade to the Oxo Pro model with its bolster, etc. Assuming you can afford to let her have $8.50 from your knife-buying fund......

    [/ QUOTE ] She's pastry chef don't forget. Her normal work knives are a Hattori HD 210mm gyuto and a 120mm MAC Petty. Hates a dull knife almost as much as me.

    My wife is the same way. Finally broke down and let her use a SwampRat, then a Busse. Worked for her. [img]/ubbthreads/images/graemlins/wink.gif[/img] The Busse snuck in cause I told her Busse's only cost $50 or so and I had a very thin one out doing some meat cutting duties. Very thin for Busse or SwampRat (a sister company) is 3/16".

    Yeah, I know, not like the Japanese knives, but her idea if it won't cut through a bone is grab a rubber mallet and baton it on through. She isn't subtle and nothing else was holding up. The edges might roll or dent a bit, or not. I've driven them into concrete (batoning wood for the smoker) with no ill effects at all to the edge.

    Something to think about for hard core kitchen use.
