    Default Here's a nice foccacia recipe

    FOCCACIA





    1 SHEET:

    ¼ cup yeast
    5 ½ cup warm water
    15 cup flour
    ¾ cup sugar
    1.5 cup olive oil
    ¼ cup rosemary
    2 tablespoons salt

    Put 1 T of sugar into the water and add the oil and yeast, mix thoroughly.

    Put the dry ingredients except flour into a bowl and mix together.

    When the yeast has bloomed, put liquid ingredients into mixer bowl. Add all dry ingredients except for flour. Add flour slowly until cleans the sides of the mixing bowl.

    Place dough in a bowl that has been sprayed lightly with food release and cover over.

    Allow to rise until double in size.

    Oil and flour a sheet pan.

    Roll out dough on sheet pan.

    Paint with oil and sprinkle with salt.

    Let rise until almost double.

    Bake at 350 for 12 to 15 minutes.

    Sprinkle with cheese and bake for 1 more minute.




    After you bake it you can cut it up with your steely knives!

    Thanks for the recipe. A twist you might like is adding some veggies to the dough. I like pimiento, bell pepper and onion and garlic.

    My pizza dough is very simple. for a 1/2 sheet pan pizza:

    1 lb. bread flour
    9 oz. warm water
    2 oz. olive oil
    pinch of salt
    1/2 package of compressed yeast
    Mix with a dough hook for 6 or 7 minutes.

    Pretty simple. I never took to using dried yeast so my formulas are stranger than others.
